Directions
1. To make the slow cooker cream cheese crack chicken: Add the chicken, cream cheese, ranch seasoning, cumin, chili powder, and garlic powder to a 6-quart slow cooker.
2. Add chicken broth, cover with the lid, and set to cook on LOW for 6-8 hours.
3. Remove the cooked chicken from the slow cooker and shred with 2 forks. Return to the slow cooker.
4. Stir in spinach and cheddar cheese into the sauce. Mix with a spoon until cheese is melted and spinach has wilted.
5. Add crispy bacon and garnish with freshly chopped scallion. Serve the slow cooker cream cheese crack chicken soup immediately. Enjoy!

- You can add more chicken broth to make the soup thinner if you prefer.We usually use between 4 and 6 cups of liquid for a 6-quart slow cooker.
- We tried this crack chicken soup with reduced-fat cream cheese instead of regular cream cheese and it worked quite well.
- If the cream cheese gets clumpy in the soup, use a whisk to get it incorporated into the broth. Alternatively, when you start cooking, you can warm up the chicken broth and stir the cream cheese progressively before pouring it over the chicken in the slow cooker. In some occurrences, the cream cheese can separate into chicken soup. This is not necessarily pretty, but it doesn’t alter the taste!
- You can use turkey bacon instead of regular pork bacon for the topping.

This recipe is fairly easy. I was short on time so I mixed my spices and ranch packets with half of the stock, poured it over my chicken breasts and pressure cooked them. I also did not add the cream cheese until after I removed the cooked breasts and cooled the liquid down some. I also softened my cream cheese and stirred it in the liquid with a whisk. This worked very well to remove clumps of cream cheese. I kept my heat to low to finish off the soup - adding extra chicken stock to get the consistency I wanted, then the spinach and then the cheese. Bacon was added just before serving. I did tweak the flavor by adding more spice to taste along with salt and pepper.

This was good, but definitely could use +only 4 cups broth. Mine also was not creamy and the cream cheese was funky not melted. I added cooked thin egg noodles. It is good, but needs something more added to it, maybe corn? sour cream? not sure but I will make this again and try other items.

Definitely needs another veggie added, and don’t add 6 cups of broth it’s too liquidy. And the cream cheese melted weird. Flavour was okay, not what I expected though.

The flavor is AWESOME! I am giving it one less star because I even added more chicken an more spinach and it was just missing something. Maybe less broth or an extra vegetable. IThink I may use this exact recipe next time I make white chicken chili and add other ingredients.

This has a really good flavor, but it's waaaaay too liquidy. Four cups of broth would've worked better. The cream cheese didn't melt properly and made the soup look grainy. It needs more spinach and cheddar cheese. The seasonings are perfect. The Ranch dressing mix gives it a nice kick. The recipe needs work as in ratio of chicken broth to the other ingredients. It's not at all creamy, which is what I thought it would be. It's good with bacon on top.

AMAZING! I read the reviews- always do - so what I did so it wasn't so liquidity- put everything in crockpot/ 2 hours later made cornstarch slurry added it- ohh & it calls for 6 cups of broth I used 5c-AMAZINGGGG! I even had 2 add a little more chix broth cuz I added A LITTLE to much cornstarch 🙄 ppl this is AMAZING made it with corn bread 5 stars

This was AWESOME! My family loved it and put it on the keeper list. I cut my chicken breast into thick strips and marinated overnight in a mixture of balsamic vinegar & and ranch dressing mix. I also whisked the softened cream cheese with some of the chicken broth to avoid clumps and did almost an entire container of baby spinach. Served with corn bread, it was the perfect dinner for a cold rainy night. Highly recommend.

It was really good but like others have commented it was not at all creamy. I even read some comments saying how theirs didn’t come out creamy so I only used 4 cups of chicken broth. My chicken was frozen & it cooked just fine. Do you think that would have made it not creamy? We will try again! Everyone loved it 🙂

Great flavor!! I like spice so I added Cayenne and red flakes, onions, red and green peppers, and fresh garlic and I used half the chicken broth.. Much more creamy and very delicious!!!

Great flavor but like previously mentioned, really liquid-y, I was hoping for a more creamer base. Will make again but won't let the chicken cook as long, reduce the broth and will add a little thickener like corn starch.
