I love my original quiche Lorraine but this time it was time to make a crustless recipe to save on the almond flour. Now, you can swap the ham for bacon for a crispy salty experience but I went with the classic ham and cheese. But, with the addition of spinach to get those cruciferous vegetables in there first thing in the a.m.

How To Make Crustless Quiche Keto Friendly

First, pick your meats. Of course, I used ham and to stay truest the recipe why not?

You can easily buy store bought diced ham. I prefer and suggest uncured to cut down on the sodium because a salty quiche isn’t very tasty.

When cooking with fresh spinach in a baked dish make sure you cook and wither the spinach first. This will allow the quiche not to be filled with water from the spinach cooking down while baking. I will add helpful tips below but you can swap out the fresh for frozen as well.

To add, I like to also shred my own cheese. This isn’t needed but I like the distinct touch and richness. I used feta for a slight tangy flavor mixed with mozzarella.

Once you have your spinach and cheese ready in a mixing bowl whisk or use a hand mixer and beat six eggs. Then, add in heavy cream, salt and pepper.

Toss in ham and cheese as well. Line your pie dish with the spinach on the bottom then pour egg mix on top. Fold spinach through a little then place in oven for 40 minutes.

Remove and allow to rest and deflate. You’ll notice the quiche is puffy when removed from oven.

Helpful Recipe Tips

  • Cooked or fresh spinach, pay attention to this because there is a difference. Frozen spinach is already withered but you’ll want to drain that excess what off ahead of adding it. When fresh, you have to cook the water out of it first. If not it will leak into your quiche and destroy it.
  • Swap out ham, sausage pairs well with spinach and cheese. Of course, the classic bacon is always great.
  • I used a 9 inch pie dish to bake this. A casserole dish will work as well. The dish is actually very easy to make.

Is Quiche Keto

Yes it is, when done properly. The issue with a quiche is it’s made with a pie crust. Which are full of carbs because crust are typically made from flour. I have a version with a crust if that is more your speed but does require a bit more prep time.

How To Freeze Crustless Quiche

Freeze the quiche after cooking only! This is due to the heavy cream in the recipe. Heavy cream doesn’t do well freeing then thawing out. It doesn’t go bad but the proteins separate. Place in a freezer safe bag or my favorite vacuum seal it. You can also prepare it and make it later. Simply whip the quiche together and place in refrigerator overnight then place in oven in the morning.

Is Crustless Quiche Keto Friendly

Yes, nothing about this isn’t keto friendly. Every ingredient is keto friendly in this recipe. Loads of fatty meats, cheese, spinach and healthy protein packed eggs. Enjoy guilt free and no need to worry about fomo!

Ingredients

  • 6 large egg
  • 3/4 cup heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups fresh spinach (if using frozen only 1 cup)
  • 2 ounces shredded mozzerella
  • 1 ounce feta cheese
  • 8 ounce diced ham

Instructions

  • If using fresh spinach cook spinach down first until it's completly withered. If using frozen cook off and drain that excess water

  • Preheat oven to 375°F

  • In a large mixing bowl beat eggs, heavy cream, salt and pepper together.

  • Next add in cheese and ham. In the pie dish or casserole dish line the bottom with the cooked spinach. Pour the egg mix over it. Then fold spinach through.

  • Bake for 40 minutes checking for doneness around 30 because ovens vary. A small jiggle in the center is fine to pull it out but it shouldn't be wet or soup looking.

  • Allow to cool and serve
